No takers?!

Wow, no takers on the chili challenge? Sad, so sad! ;)

Here's the one I made this past week, but I have mixed feelings about it. This could be done in the crockpot. Also, it didn't have enough spice for me. I ran out of chili powder (who does that?!) and it didn't have the kick I wanted. The tabasco added a bit of spice, but it wasn't the kind that I wanted. I will try again for a better recipe!

Chili
1 lb ground beef
1 can kidney beans, drained and rinsed
1 can white beans (great northern, butter beans, etc) drained and rinsed
1 diced onion
8 cloves of garlic, minced (I used 6)
1 29 oz. tomatoes (I had one can diced and one can stewed..yum!)
1 15oz. tom. sauce
3 TB. Chili powder (I used less and I wish I would've used more!)
2 tsp. cumin
1 tsp pepper
1 tsp salt
1 TB. tabasco (I used 1/2 TB and it actually needed less)

Brown meat and drain. Add everything else and simmer.

Not a huge chili fan, sorry. But I am trying a "ghost chili" (great northern beans, chicken, green chilies, yummy!) out in the next couple weeks and I'll tell you if it's good

Here is Cory's mom's recipe. I made it last night. Complete with scones. it was a hit. Hope you like it!

Chili-Judy Hansen

2 lbs ground beef (drained)
1 large onion
2 cloves
2 1/2 tsp salt
3/4 tsp pepper
1 tsp chili powder
1 small can tomato sauce (or whatever size you have)
2 cups of water (optional)
1 Large can on tomato juice (the 10 inch tall ones)
2 Tbsp sugar
2 cans red beans (I like the kind in chili sauce, if you use regular beans-rinse)

brown meat and seasonings. Combine rest of ingredients except beans. Bring to a boil. Simmer 2 hours. Add beans the last 15 minutes. Serve with hot scones (made out of rhodes rolls) and honey butter.

I also like to mix shredded cheese and sour cream in my bowl; yummy yummy! My boys even ate it!! Best of luck!

Okay so I have a Chili recipe, I have been meaning to post it, but I am horrible about commenting. So here it goes....
1/2 lb. ground beef
1 medium onion chopped (1/2 cup)
1 clove garlic, finely chopped
1 can (14 1/2oz) diced tomatoes, not drained
1 can (8oz) tomato sauce
1 TBSP chili powder
3/4 TSP ground cumin
1/4 TSP salt
1/4 TSP pepper
1 can (15 or 16oz) kidney beans or pinto beans rinsed and drained, if desired (or 2 cups cooked beans with or without juice)

Cook beef, onion, and garlic in 3 qt. sauce pan over medium heat 8-10 min. stirring occasionally, until beef is browned, drain.

Stir remaining ingredients except beans. Heat to boiling, reduce heat. Cover and stir 30 min to 1 hour, stirring occasionally.

Stir in beans. Heat to boiling, reduce heat. Simmer uncovered about 10 min., stirring occasionally, until desired thickness.

I always double this recipe when I make it. I hope you like it.
